Buřtguláš (Potato Goulash) Recipe
A hearty Czech Potato Goulash

- Serves: 4
- 3x Špekáčky
- 1 kg Potatoes
- 2 medium brown onions; chopped finely
- 125 ml Sour Cream
- 2 tbs Ground Sweet Paprika
- 1 tbs Plain Flour
- Vegetable Oil
- 1 tbs Ground Caraway
- Pinch of Salt
- Serve with crusty rye bread (or for display, serve in a hollowed out bread loaf)
- Peel the onion and chop it finely. Peel the potatoes and cut them into cubes. You can peel the špekáčky (but it is not necessary), cut it into chunky pieces.
- Heat a medium sized saucepan over medium heat. Add oil and fry the onions until browned.
- Add potatoes, spices, and salt. Allow to heat through. Add water to the saucepan to cover the potatoes. Bring to the boil.
- Mix the flour in the cream, taking care to remove any lumps. Pour into the saucepan when potatoes are cooked half-way through. When everything starts to bubble again, add the Špekáčky and cook until potatoes are done.
