Pork Knuckle Recipe

Crispy skin pork knuckle served with dumplings, sauerkraut, mustard, and rich gravy.

  • Serves: 3-4 people
Ingredients
  • 3 Cooked and Cured Pork Knuckles
  • Course Sea Salt
Serving Suggestions
  • Pfanni dumplings (potato or bread)
  • Kühne Sauerkraut or Red Cabbage
  • Kühne mild German mustard
  • Gravy
Cooking Instructions
  1. Pre-heat dry oven to 220 degrees Celsius.
  2. Place pork knuckles onto tray lined with baking paper, or in a greased baking dish.
  3. Dry skin with paper towel and score to your liking. Rub sea salt over skin.
  4. Place pork knuckles into oven for 1-1.5 hours until skin is crisp. For best results, do not open oven during cooking.
  5. Once skin is crispy, remove from oven. Serve immediately with dumplings, sauerkraut, mustard, and gravy.
Dumpling Preparation
  1. Place bread or potato dumplings into medium saucepan with cold salted water. Do not remove from individual packaging.
  2. Bring saucepan to boil, then reduce to simmer for 20 minutes.
  3. Remove dumplings from saucepan. Place into bowl and run under cold water for 10 seconds.
  4. When serving, remove dumplings from individual wrapping.
